With a career spanning some of the world’s finest kitchens, Tom brings experience, creativity and quiet confidence to the heart of the Montpellier Wine Bar. His approach is rooted in classical technique, yet shaped by a modern, ingredient-led philosophy.

A Journey from Sea Cadets to Michelin-Starred Kitchens

Tom’s culinary journey began in an unexpected place — the local sea cadets. A simple cookery competition sparked a lifelong passion for food and set him on a remarkable path.

From there, he began his professional training with an apprenticeship at the renowned Lygon Arms in the Cotswolds. Here, he developed the foundations of classical cooking while refining his skills under expert guidance.

Cooking with the Best

Tom’s ambition and talent quickly saw him rise through the ranks of London’s most respected kitchens, including The Berkeley, Claridge’s, L’Escargot and Mosimann’s.

Along the way, he refined his craft at the highest level, working in fast-paced, demanding environments that shaped both his precision and creativity. He later moved to Switzerland, where he joined the team at the legendary Gstaad Palace and gained valuable international experience.

Throughout his career, Tom has worked alongside some of the industry’s most influential chefs, including Anton Mosimann, John Williams, Paul Gayler, Simon Hopkinson and Marco Pierre White.

As a result, his cooking style blends classical technique with modern thinking, always guided by a respect for the ingredient.


A Homecoming to the Cotswolds

Now, Tom brings his experience back to the Cotswolds, leading the kitchen at Cellar Restaurant within the Montpellier Wine Bar Cheltenham.

Here, his menus celebrate the best of seasonal, locally sourced produce. Each dish is designed to feel simple, elegant and full of flavour.

His philosophy is clear — good, honest cooking, delivered with precision and just the right touch of creativity.

Tom’s passion for food goes beyond the plate – it’s about storytelling, tradition, and a sense of place. His time at Cheltenham’s iconic The Daffodil holds special significance, as it was there he met his wife, Jules, and partnered with Elliott to create something truly special. 

Now, at Cellar, he’s on a new adventure, blending his love for the region with a world-class culinary pedigree.
